Within the Amsterdam Foodhallen a hommage is given to the culinary aspects of the pig by The Rough Kitchen, a concept driven by two carnivores to the bone: ‘Mr. Smokey Goodness’ Jord althuizen & culinary journalist Marcus Polman. We smoke, grill and roast. Preferably on our charcoal fuelled Meadow Creek smoker, the rolls royce of bbq’s. Quality Meat is our mission.
Products served are made from quality breed pigs that have enjoyed a good life. They are prepared on site following authentic recipes ensuring the best quality and flavor or obtained from Hollands’ best butchers. Signature items include the famous Smokey Goodness pulled pork sandwich; made from 16 hours slow smoked pork shoulders, and zolderspek; bacon cold smoked for six weeks and cured for a year. Weekly specials finalize the always tempting offerings from our kitchen.
